Pork Tenderloin

  • 1 tsp coriander seeds
  • ½ tsp fenugreek seeds
  • 1 tsp ground cumin
  • ½ oz oil
  • 1 garlic clove
  • 9 oz pork tenderloin, sinew free, boneless, cut in strips (¾ in. x 1-1½ in.), patted dry with paper towels

Coconut Sauce

  • 3 garlic cloves
  • 2 fresh chilies, deseeded, chopped
  • 1 shallot, halved
  • 1 oz coconut oil
  • 3 ½ oz raw cashews
  • 3 ½ oz coconut milk
  • 2 oz water
  • 1 tsp soy sauce
  • 2 tsp lime juice
  • 1 tsp brown sugar
  • 1 pinch ground cayenne pepper
  • 1 pinch salt
  • 1 pinch ground black pepper
