  • oil spray, to grease
  • 100 g almonds
  • 1 tbsp dried Italian herbs
  • ½ tsp sea salt
  • ½ tsp ground black pepper
  • 1 egg
  • 500 g beef mince

Tomato soup

  • 1 onion, cut into halves (approx. 150 g)
  • 2 garlic cloves
  • ½ red capsicum, cut into pieces
  • 30 g extra virgin olive oil
  • 800 g fresh tomatoes, cut into quarters
  • 150 g button mushrooms, cut into halves
  • 100 g tomato paste
  • 100 g water
  • 2 tbsp Chicken stock powder or Chicken stock paste (see Tip)
  • 2 tsp dried Italian herbs
  • 1 tsp honey
  • 1 tsp balsamic vinegar
  • 2 zucchini, large yellow or green, cut into zoodles
  • Parmesan cheese, shaved, to serve
  • gluten free bread, to serve (optional)
