  • 1 tsp extra virgin olive oil
  • 4 eggs, chilled

  • 2 tbsp white vinegar
  • 1 avocado, flesh only
  • 100 g cherry tomatoes, cut into halves
  • 4 slices seeded wholemeal bread (58 g each), toasted (see Tips)
