- 700 g butternut squash deseeded, peeled and cut in pieces (5 cm)

- 230 g potatoes small, (approx. 5), skins on, cut in eighths
- 170 g carrots (approx. 2), cut in pieces (2-3 cm)

- 1 Tbsp olive oil
- 300 g banana shallots (approx. 8), halved
- 50 g unsalted butter diced
- 2 sprigs fresh rosemary (approx. 10 cm each), leaves only
