- 2 cm piece fresh ginger, peeled

- 6 sprigs fresh coriander, leaves and stalks
- 500 g firm white fish fillets, cut into pieces (2-3 cm)

- 1 tbsp kecap manis

- 2 tbsp milk
Red cabbage salad
- 50 - 80 g red cabbage, finely shredded
- 6 - 8 snow peas, cut into thin slices
- ¼ cucumber, deseeded and cut into thin slices
- 1 tbsp lime juice
- 2 tsp fish sauce
- 2 tsp brown sugar
Chilli mayo
- 50 g mayonnaise (see Tips)
- 1 - 2 tbsp hot chilli sauce, to taste

- 1 - 2 tbsp oil, for frying
- 3 bread rolls, cut into halves horizontally (see Tips)
