- 250 g plain flour
- 2 tsp dried instant yeast
- ¼ tsp baking powder
- ¼ tsp bicarbonate of soda
- 1 pinch caster sugar
- ¼ tsp sea salt
- vegetable oil to grease
Hoisin banana
- 1 garlic clove
- 250 g onion cut into halves, then cut into slices
- 30 g vegetable oil plus extra to grease
- ½ tsp Chinese five spice powder
- ¼ - ½ tsp dried chilli flakes
- 4 bananas peel only (see Tips)
- 60 g hoisin sauce
- 2 tbsp fresh coriander leaves torn
- ¼ tsp sea salt
- plain flour to dust
- 500 g boiling water
Assembly
- 2 Lebanese cucumbers sliced into matchsticks
- 2 fresh mango (approx. 350 g) , sliced into matchsticks
- 2 tbsp rice wine vinegar
- 1 tbsp maple syrup
- 1 tsp sesame oil
- 1 fresh red chilli deseeded and thinly sliced
- 1 lime zested and juiced
- 1 ½ tbsp roasted unsalted peanuts coarsely chopped, to sprinkle
- fresh coriander leaves, to garnish
- spring onions/green onions sliced, to serve
