- 400 g canned diced tomatoes
- 300 g hot water
- ½ chipotle chilli
- 1 tbsp freshly squeezed lemon juice
- 2 tsp Vegetable stock paste
- 1 pinch sea salt
- 1 pinch ground black pepper
- 3 bok choy, cut in halves
