  • 30 g coriander seeds

  • 3 heaped Tbsp black peppercorns
  • 1 lemon thin peelings of skin only
  • 2 dried bay leaves

Spice Rub

  • 2 limes thin peelings of skin only
  • 2 lemons thin peelings of skin only
  • 2 tsp ground turmeric
  • 1 pinch saffron
  • 2 garlic cloves
  • 2 Kashmiri dried chillies
  • 1 heaped tsp sweet paprika
  • 1 heaped tsp caster sugar
  • 2 tsp fine sea salt plus extra to taste
  • 1 tsp ground black pepper plus extra to taste
    ou 1 tsp black peppercorns

  • 80 g red onions quartered
  • 60 g unsalted butter diced
  • 900 g chicken stock
  • 850 g waxy potatoes peeled and quartered
  • 1 sprig fresh rosemary to garnish
