  • 1 - 2 fresh red chillies trimmed, to taste
  • 2 ½ cm piece fresh ginger peeled
  • 500 g fresh tomatoes cut into halves
  • 100 g eggplant cut into pieces (3 cm)
  • 1 apple cored and cut into halves
  • 100 g fresh pineapple cut into pieces (3 cm)
  • 80 g sun dried tomatoes
  • 25 g fresh coriander leaves, roots and stalks cut into pieces
  • 8 sprigs fresh thyme leaves only
  • 3 sprigs fresh basil leaves only
  • 5 sprigs fresh parsley leaves only
  • 200 g white vinegar
  • 125 g brown sugar
  • 125 g tomato paste
  • 1 sweet corn cob kernels removed from cob
  • 200 g canned tomatoes diced
  • sea salt to season
  • ground black pepper to season
