- 3 garlic cloves
- 2 cm piece fresh galangal peeled
- 70 g eschalots cut into halves
- 1 tsp Chicken stock paste (see Tips)
- 700 g water
- 2 tsp tom yum sauce
- 40 g fish sauce
- 2 tsp sugar
- 200 g medium raw prawns peeled
- 1 tbsp lime juice
- 1 spring onion/shallot trimmed, cut into halves and shredded lengthways, for garnishing
